Toasted Wheaten with Crushed Avocado and Alfalfa Sprouts
SERVES 2 SUPER EASY
This is a great light lunch or snack that is packed full of goodness and literally takes minutes to prepare. The wheaten bread is wonderfully filling and will help to keep your energy levels high.
1 firm ripe avocado
1 tsp sriracha chilli sauce
4 slices Rankin Selection stoneground Irish wheaten bread
1 radish, very thinly sliced
Handful fresh alfalfa sprouts
Sea salt and freshly ground black pepper
Cut the avocado in half and scoop out the flesh into a bowl, discarding the stone. Roughly crush with a fork and stir in the chilli sauce, then season with salt and pepper.
Toast or griddle the wheaten bread and arranges topped with the crushed avocado. Scatter over the radish and alfalfa spouts to serve.
