Grilled Chicken with Lemon, Black Pepper & Red Onion
SERVES 4 SUPER EASY
This zesty little dish can be whipped up in minutes, but it does improve if you have the time to let it marinate. You can find preserved lemons in most large supermarkets and in asian or middle eastern groceries
4 chicken fillets, boneless, skinned and 200 g (7 oz) each
1 preserved lemon, finely chopped
1 red onion, finely chopped
1 teaspoon black pepper cracked
½ teaspoon chilli flakes (optional)
1 tablespoon chopped fresh parsley
2 tablespoons olive oil
1 teaspoon clear honey
1 teaspoon salt
A few mixed salad leaves to serve
Pre–heat the grill to its highest setting.
Combine all the ingredients in a large bowl and toss thoroughly. If you have the time, allow it to marinate for a few hours in the fridge.
Place the chicken flat on a grill tray. Make sure that the chicken pieces are well coated with the little pieces of onion and lemon and so on as this gives a beautifulcolour. Place under the grill and cook for 7–10 minutes on each side until the chicken is firm and completely cooked. Serve garnished with a few mixed salad leaves.
