Exotic Fruit Salad with a Passionfruit Syrup
SERVES 4 – 8 SUPER EASY
For the syrup
200 ml. water
200 g. sugar
1/2 vanilla pod, split ( optional )
2 – 4 fresh passionfruit, halved
For the salad
1 medium ripe pineapple
1 punnet strawberries
1 punnet blueberries
First put the water, sugar, and vanilla pod in a heavy bottomed pan, and put over medium high heat. Bring to the boil. Let it boil for a minute or two to ensure that all the sugar has dissolved, and then remove it from the heat. Squeeze all the seeds, flesh and juice from each passionfruit half, and add it to the syrup. Set aside and reserve.
Cut each of the fruits into attractive, bite sized pieces. Now this is just a list of the fruits we used. Feel free to exchange and substitute what ever you have on hand, can get in good condition, or what you prefer. Just think of color and texture, and if you try to use only ripe, top quality fruits, your salad will be delicious.
Just before serving, perhaps up to 10 minutes before, pour the syrup over the cut fruit, and toss gently. The flavours will infuse, and the aroma will be irrisistable. Dive in.
