Smokey Tomato & Bacon Soup


Ingredient list

2 Tbsp. olive oil
2 onions, finely chopped
250 g. piece smoky bacon, diced
12 large ripe tomatoes, roughly chopped, or 2 × 400 g. can of tomatoes
1 Tbsp. tomato puree
2 Tbsp. chopped fresh parsley
salt and freshly ground black pepper


Heat the oil in a large pan.  Add the onions and bacon and cook for about 5 minutes, stirring occasionally, or until the onions have softened, and the bacon is lightly golden.

Stir the tomatoes, and the tomato puree into the pan.  Bring to a simmer, and cook gently for 10 – 15 minutes, until all the flavours are combined. 

Process in a blender or food processor, and then pass through a fine chinois.  Season.

To serve, ladle the soup into warmed bowls, and garnish with the chopped parsley.  Serve at once.
